NO OIL!!! Crispy and delicious comfort potato tacos dinner in under 20 minutes! It’s cheat day! You can indulge without going too far off track.


  • 4 corn tortillas
  • 1 cup leftover mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • Salsa, guacamole, hot sauce, extra cheese for garnish.


  1. Heat tortillas in a hot pan until warmed and soft.
  2. Spread each tortilla with 1/4 cup mashed potatoes.
  3. Sprinkle each tortilla with 2 tablespoons cheese and roll up.
  4. Place rolled tacos seam side down in the basket of Air fryer

  5. Set temperature to 390 degrees and cook for 18-20 minutes until crispy.
  6. Top with desired garnish and enjoy.
